- 1 Plantain
- 2 Potatoes
- 1 Brinjal
- Few carrots
- Few Beans
- Few Drumstick
- Few Green peas
- 2-3 Green Chillies
- Grated Coconut
- Thick Curd
- Few Curry Leaves
- 3-4 tsp. Coconut Oil
- Salt to taste
Now lets look at the method to prepare delicious Aviyal:
Cut the vegetables into long pieces and steam in pressure cooker.Grind grated coconut and green hot chillies and salt.Add this to thick curd.Add cooked vegetables, mix well and heat for sometime. When cooked, add curry leaves and 1/2 spoon coconut oil.
Now enjoy delicious Aviyal !!
